Since its inception 10 years ago, Millstone Farm in Wilton has raised presold grass-fed heritage breed turkeys during the Thanksgiving season. Unlike “cage-free” turkeys, which still see some degree of confinement, “these animals are on grass from the time their feathered until they go to the abattoir,” said Anne Farrell with Millstone. According to Farrell, grazing makes the birds healthier, and hers never take antibiotics. Heritage turkeys are sought-after breeds that taste more similar to wild turkeys than to those bred for industrial agriculture. The turkeys pictured here went to the abattoir on Nov. 20.
